I don't use any myself right now, but FRAPS is pretty much standard fare.

I've only used Fraps and CamStudio, and of those two, Fraps is the easy winner... however I just found out that MSI Afterburner has a built-in video recorder, which I'm going to give a try soon...

I thought AMD had a free one that was pretty good, but i can't find it. (it may have been someone else...)
