I enjoy the Final Fantasy series soundtracks. If I were to choose, I would say either VI (FFIII US) or VIII. Not a game soundtrack, but FF Advent Children is pretty great as well.

Yeah thats a good one. Thats when Squaresoft was on their game!

Yeah, Halo too I enjoyed listening too :)
Also, another couple of good ones are from the game Freelancer (more specifically the Omicron, Omega and Sigma system music) :)
Either the Persona 3 or any of the Shoji soundtracks, final fantasy 7, guilty gear, and the gun grave one was quite good, I have a lot of video game soundtracks so many more.
